My friend Christy has presented me with an offer I could not in a million years refuse. She has done me the honor of requesting that I co-host her annual Run Bike Swim Cook Challenge. I could hardly be more excited about it. Think of it as a cross between Ironman and Ironchef, only with 28 days to complete the challenges. You are all invited to come along for the ride, to participate as much as you like, or simply to read about the progress of those who are participating.
Here’s how it goes:
You have 28 days to do one, some, or all of the challenges — whatever you decide based on your interest, your fitness level, and your cooking skills. For every challenge you complete, you will get one entry into a drawing for a yet undecided but absolutely fabulous prize.
Challenge 1: Run 26.2 miles (think of it as a mile a day)
Challenge 2: Swim 2.4 miles*
Challenge 3: Bike 112 miles**
Challenge 4: Cook 3 of the 4 superfood “iron-chef” challenges.
Today and on the second Sunday (Feb. 13) Christy will post the superfood challenge for the week and category; on the first and third Sundays (Feb. 6th and 20th), I will post the challenge. You have a week to come up with a dish that blows us away.
Now before you freak out and run screaming, remember you have 28 days to do this. Unlike the amazing Ironman competitors, you get a whole month to do your triathlon. And this is no two hour culinary competition with glaring lights and TV cameras and hyper announcers. Nope. This is you, your superfood of the week, and your kitchen going at it for seven days.
Still not convinced? Let me sweeten the deal a bit more: you can do all your running, swimming and biking (and cooking!) inside. Or outside. Your choice.
* One water aerobics class = 0.4 miles
**One spin class = 12 miles
How to participate: Send an e-mail to Christy (christy DOT spackman AT gmail DOT com) with your challenge meal for the week, your progress on the triathlon, and any related issues/stories by the next Sunday at midnight, including a link to your blogpost for the week (if you have a blog — if not, just send the status report and pic in an e-mail). Your post/e-mail should highlight where you are in the event, and/or have a mouthwatering pic of your ironchef entry for the week.
This week, Christy has chosen hazelnuts as the superfood challenge, and breakfast as the meal. Hazelnuts for breakfast. You can do that. I can do that. Send your submissions to Christy at the above e-mail address by Sunday at midnight. I’ll post the next superfood challenge on Sunday as well.
