My favorite Christmas carol is O Holy Night. (Followed closely by Once in Royal David’s City, which, I believe, does not get the love it deserves.) My favorite Christmas movie is The Muppet Christmas Carol. My favorite Christmas book is . . . um, will you still like me if I say I don’t know? I haven’t gotten into the Christmas books like I want to. Any suggestions? My favorite Christmas cookie is all of them. And my favorite Christmas dip is feta salsa.
Okay, so there isn’t really anything particularly Christmas-y about this dip, although it is rather festive looking. I’ve been eating it since I discovered it on Smitten Kitchen this summer and honestly can’t get enough. I made it for book club in September. I made it in October for a Halloween party. I made it on Sunday for our Christmas party. It seems fancy but couldn’t be easier to make. I hope you like it is much as I do. Consider this my Christmas gift to you.
Feta Salsa from Smitten Kitchen
1/2 pound feta cheese
2/3 cup sundried tomatoes in oil
1/2 cup pitted Kalamata olives
2 tablespoons fresh dill (I’ve never used this since I can’t find it in my neighborhood)
3 tablespoons flat-leaf parsley
approx. 1/4 cup olive oil (or to taste)
Crumble the feta into a bowl. Chop the tomatoes and olives, dill and parsley and thinly slice the scallions. Gently mix the ingredients together and drizzle with a few tablespoons of olive oil. Serve with crackers, crusty bread, or just grab a spoon and dig in.
